We are halfway through the week folks! It's been a busy one indeed and I've been ready for bed by nine each night so I can't imagine what time I'll be sleeping at come Friday night. One thing I did do this weekend and I'm so happy I did was prepped meals for the week ahead of time and with fall quickly upon us I couldn't wait to use my crock pot and make another fall favourite of mine. Lazy cabbage rolls. The best feeling ever after being gone all day is walking into your home and it smells like someone's been slaving away all day cooking a delicious meal - and this is exactly what this recipe feels like. It's so easy to prepare but not easy to resist once supper time comes around. Another perk, this recipe makes LOTS. I had leftovers for lunch, froze some for later days, and sent a big container with my husband to work. So get your ingredients and make this one pot wonder like yesterday ;)
Crock Pot Lazy Cabbage Rolls
2lbs lean ground beef
4 cups of cabbage, chopped
1 onion, diced
5 cloves garlic, crushed
2 cups of rice, brown or white
1 large can stewed tomato chunks
2 cans tomato soup
2 1/2 cans water
1/4 cup ketchup
4 tbsp Worcestershire sauce
1 tbsp dry mustard
Brown ground beef in a non-stick pan, drain any fat and season with salt and pepper. While beef is cooking, chop up your cabbage and place half of the cabbage on the bottom of your crock pot.
Next add the cooked ground beef on top. Then add the onion. I had some tomatoes sitting in my crisper so I added them in here too.
Add rice. In a bowl, mix together remaining ingredients and pour over top of rice.
Add remaining cabbage on top, place the lid on, turn on high for 3 hours or on low for 5 hours.
And this is what I found when I came home! Give it a good mix to combine all of the layers and there you have it, lazy cabbage rolls.
No extra prep before it's ready to eat, just spoon into a bowl.
